(a cheater version of pho that can be made in 15 minutes using mostly pantry staples)
i'm definitely not recommending paying ridiculous online prices - just added those links for convenience.

1/3 pkg | bahn pho |
1 tbsp | better than bouillon beef |
1 dash | powdered ginger |
1 dash | 5-spice powder |
1 tsp | sugar |
1 tbsp | fish sauce |
1 tbsp | freeze dried onion |
1/2 lb | leftover meats and toppings of your choice (rotisserie chicken, sliced roast beef, etc) |
1 | lime |
1 squirt | hoisin sauce |
1 squirt | sriracha |
- boil 2 pots of water
- one with enough water to turn into your soup
- one big enough to blanch your noodles
- when noodle water has come to a boil, put in noodles
- start timer for package instructions minus a minute or so
- if package only has soaking instructions, try 4 minutes
- in your bowl, add bouillon, ginger, 5 spice powder, sugar, fish sauce and mix well
- after soup water boils, add to bowl (fill 75%)
- sprinkle in dried onion to reconstitute
- squirt hoisin and sriracha to a saucer for dipping
- cut lime in half
- check on noodles - when just about done, strain and (optionally rinse under cold water, then) add to bowl
- mix soup well to distribute flavor
- add meat toppings
- squeeze lime into soup
